After studying viti-oeno, as well as a stint at the \u003cstrong\u003eChapoutier houses\u003c\/strong\u003e and at \u003cstrong\u003eChâteau Margaux\u003c\/strong\u003e, he decided in 2019, with the help of his sister \u003cstrong\u003eCaroline\u003c\/strong\u003e, to take over the family estate. The entire family estate? Initially no, he will only concentrate on \u003cstrong\u003e1.5 hectares\u003c\/strong\u003e (out of a total of 23 hectares!) which he will rent while taking advantage of the family infrastructure. He then decided to \u003cstrong\u003eban\u003c\/strong\u003e all use of synthetic chemicals and to harvest at the last moment in order to guarantee optimal grape quality. In the vatting, he decided to work by \u003cstrong\u003egravity\u003c\/strong\u003e and to limit the use of So2 as much as possible.
