It was during a stay in \u003c\/span\u003e\u003cstrong\u003e\u003cspan\u003eNew Zealand\u003c\/span\u003e\u003c\/strong\u003e\u003cspan\u003e that the desire to become a winemaker became clear, before he trained in \u003c\/span\u003e\u003cstrong\u003e\u003cspan\u003eBeaune and then Montpellier\u003c\/span\u003e\u003c\/strong\u003e\u003cspan\u003e and worked at several estates, notably with \u003c\/span\u003e\u003cstrong\u003e\u003cspan\u003eYann Chave in Crozes-Hermitage\u003c\/span\u003e\u003c\/strong\u003e\u003cspan\u003e and \u003c\/span\u003e\u003cstrong\u003e\u003cspan\u003ePeter Fischer at Château Revelette\u003c\/span\u003e\u003c\/strong\u003e\u003cspan\u003e. He eventually returned to his family's land and settled in the early \u003c\/span\u003e\u003cstrong\u003e\u003cspan\u003e2020s\u003c\/span\u003e\u003c\/strong\u003e\u003cspan\u003e, in the \u003c\/span\u003e\u003cstrong\u003e\u003cspan\u003eDoux Valley\u003c\/span\u003e\u003c\/strong\u003e\u003cspan\u003e, a few kilometers from Tournon-sur-Rhône. His estate is gradually being built up between \u003c\/span\u003e\u003cstrong\u003e\u003cspan\u003efarmed vineyards, new plantings, and grape purchases\u003c\/span\u003e\u003c\/strong\u003e\u003cspan\u003e from winemakers he knows.\u003c\/span\u003e\u003c\/p\u003e\n\u003ch3\u003eHigh-altitude vineyards and a real desire for biodiversity\u003c\/h3\u003e\n\u003cp class=\"isSelectedEnd\"\u003e\u003cspan\u003eA large part of the project is taking place on the Ardèche heights, with parcels located around \u003c\/span\u003e\u003cstrong\u003e\u003cspan\u003e400 to 500 meters above sea level\u003c\/span\u003e\u003c\/strong\u003e\u003cspan\u003e, often north-facing and planted on \u003c\/span\u003e\u003cstrong\u003e\u003cspan\u003egranitic soils\u003c\/span\u003e\u003c\/strong\u003e\u003cspan\u003e. Étienne mainly works with \u003c\/span\u003e\u003cstrong\u003e\u003cspan\u003eSyrah, Gamay, and Marsanne\u003c\/span\u003e\u003c\/strong\u003e\u003cspan\u003e, while also seeking out other grape varieties when they make sense in his blends. But his idea goes far beyond the vineyard: he wants to build a farm focused on \u003c\/span\u003e\u003cstrong\u003e\u003cspan\u003epolyculture and agroforestry\u003c\/span\u003e\u003c\/strong\u003e\u003cspan\u003e, reintroducing fruit trees, animals, and spontaneous vegetation to restore a greater balance between fauna and flora. Treatments are kept to a minimum, with low doses of copper and sulfur, as well as manure and infusions.\u003c\/span\u003e\u003c\/p\u003e\n\u003ch3\u003eFree, fresh, and unadorned wines\u003c\/h3\u003e\n\u003cp\u003e\u003cspan\u003eIn the cellar, Étienne maintains the same philosophy: \u003c\/span\u003e\u003cstrong\u003e\u003cspan\u003ewinemaking without additives\u003c\/span\u003e\u003c\/strong\u003e\u003cspan\u003e, with only a little sulfur when the wine needs it, and aging that varies according to the cuvées between \u003c\/span\u003e\u003cstrong\u003e\u003cspan\u003etank, amphora, barrel, and demi-muid\u003c\/span\u003e\u003c\/strong\u003e\u003cspan\u003e. There is no fixed recipe, but a clear search for \u003c\/span\u003e\u003cstrong\u003e\u003cspan\u003efreshness, fruit, and drinkability\u003c\/span\u003e\u003c\/strong\u003e\u003cspan\u003e, far from the sometimes more massive expressions of the Northern Rhône. His cuvées range from the light Merlot of \u003c\/span\u003e\u003cstrong\u003e\u003cspan\u003ePremière Lecture\u003c\/span\u003e\u003c\/strong\u003e\u003cspan\u003e to deeper Syrahs like \u003c\/span\u003e\u003cstrong\u003e\u003cspan\u003eLes Feux du Ciel\u003c\/span\u003e\u003c\/strong\u003e\u003cspan\u003e, as well as more free blends like \u003c\/span\u003e\u003cstrong\u003e\u003cspan\u003eMurmure de l’Eau\u003c\/span\u003e\u003c\/strong\u003e\u003cspan\u003e. In the glass, we find black fruits, violet, pepper, and a smoky touch, with a deep palate, fine tannins, and a lot of freshness.
