They in fact do their apprenticeship a few kilometers from each other, in the South \u003ca href=\"https:\/\/mireehaute.com\/en\/collections\/jura\" title=\"Jura\" target=\"_blank\"\u003e\u003cstrong\u003eJura\u003c\/strong\u003e\u003c\/a\u003e: Mélissa with the \u003ca href=\"https:\/\/mireehaute.com\/en\/collections\/domaine-labet?_pos=1\u0026amp;_psq=labet\u0026amp;_ss=e\u0026amp;_v=1.0\" title=\"Labet\" target=\"_blank\"\u003e\u003cstrong\u003eLabets\u003c\/strong\u003e\u003c\/a\u003e, and Romain with \u003cstrong\u003eJean-François Ganevat\u003c\/strong\u003e. With masters like this, the future could only be promising... They are thus trained in the basics of organic and biodynamic peasant agriculture, but also in \u003cstrong\u003enatural winemaking\u003c\/strong\u003e. \u003cbr\u003e\u003c\/p\u003e\n\u003ch2\u003eA first hectare between Pinot Noir and Sauvignon\u003c\/h2\u003e\n\u003cp\u003eBuilding on these two experiences, they decided to return to \u003cstrong\u003eChablis\u003c\/strong\u003e, where they first recovered \u003cstrong\u003e1 ha\u003c\/strong\u003e of\u003cstrong\u003e Pinot Noir\u003c\/strong\u003e and \u003cstrong\u003eSauvignon\u003c\/strong\u003e vines. They squatted in the family winery - the De Moor estate in Courgis - and vinified their first vintage there in 2021. The wines are made \u003cstrong\u003ewithout inputs\u003c\/strong\u003e. \u003cbr\u003e\u003c\/p\u003e\n\u003ch3\u003eA promising future for La Petite Empreinte in Chablis and Saint-Bris\u003c\/h3\u003e\n\u003cp\u003eAlong the way, other vines presented themselves to them in \u003cstrong\u003eChablis\u003c\/strong\u003e and \u003cstrong\u003eSaint Bris\u003c\/strong\u003e.
