Established on his native land, he decides to work as \u003cstrong\u003enaturally\u003c\/strong\u003e and \u003cstrong\u003esimply\u003c\/strong\u003e as possible, he works his vines mechanically while respecting the principles of \u003cstrong\u003eorganic farming\u003c\/strong\u003e and those of \u003cstrong\u003ebiodynamics\u003c\/strong\u003e, without synthetic products.\u003c\/p\u003e\n\u003ch3 class=\"\" data-end=\"916\" data-start=\"883\"\u003eVinification in total freedom\u003c\/h3\u003e\n\u003cp class=\"\" data-end=\"1501\" data-start=\"918\"\u003eThe idea is to implement work in the vines which allows each plot to stand out naturally, highlighting its terroir. The harvest is done \u003cstrong\u003emanually\u003c\/strong\u003e and the work in the cellar is done just as naturally as that in the vineyard. During \u003cstrong\u003espontaneous fermentations\u003c\/strong\u003e, the golden rule is that you don't touch anything. \u003cstrong\u003eNo sulphites\u003c\/strong\u003e in the wines, no filtration and only \u003cstrong\u003enatural yeasts\u003c\/strong\u003e.
