The first two grape varieties, grown at Domaine du Mazel in Ardèche, are pressed slowly over four days before the Marsanne is added during fermentation. The wine then ferments gently in the foudre until spring. Expect ripe yellow fruit, citrus and wildflowers, with lovely body and, above all, surprisingly lively acidity for a white wine from the South.
