After semi-carbonic fermentation in concrete and blending with a little direct pressing juice, the wine matures in a fiberglass dome, allowing it to \"dance.\" The nose opens with aromas of crushed raspberry, peony, and a hint of blood orange zest. The palate is joyfully delicate: bright fruit, silky tannins, and a lingering saline finish.
