They also work to safeguard their plant heritage, one of their favorite things.\u003c\/p\u003e\n\u003ch3\u003eManual harvesting and natural winemaking\u003c\/h3\u003e\n\u003cp\u003eAll harvests are done \u003cstrong\u003emanually\u003c\/strong\u003e in crates and with particular attention to sorting the grapes in order to pick the healthiest grapes possible. In the cellar, fermentations are started from stock with native yeasts; the estate carries out real work to select native yeasts on their own terroir in order to maintain a unity of style.\u003c\/p\u003e\n\u003ch2\u003eA pure expression of the Irouléguy terroir\u003c\/h2\u003e\n\u003ch3\u003eCareful maturing, well-balanced wines\u003c\/h3\u003e\n\u003cp\u003eAging on the lees with light stirring is then carried out in order to bring a certain roundness to the grape varieties which can sometimes appear hard and sometimes austere.
