This \u003cstrong\u003eHautes Côtes de Beaune\u003c\/strong\u003e territory suits them perfectly: the harvest can be waited patiently, much later than in \u003cstrong\u003eCôte de Beaune\u003c\/strong\u003e or \u003cstrong\u003eCôte de Nuits\u003c\/strong\u003e. The grapes benefit from the freshness of these \u003cstrong\u003ealtitude plots\u003c\/strong\u003e, and this is reflected in the wines. \u003cbr\u003eGuided by the experience of Christian - former cellar master at \u003ca href=\"https:\/\/mireehaute.com\/en\/collections\/chandon-de-briailles\" target=\"_blank\" title=\"Chandon de Briailles\" rel=\"noopener noreferrer\"\u003e\u003cstrong\u003eChandon de Briailles\u003c\/strong\u003e\u003c\/a\u003e - they work as\u003cstrong\u003e naturally\u003c\/strong\u003e as possible in the vineyard and in the cellar: no sulfur in the vines, minimal doses of copper, plowing with horses \u0026amp; \u003cstrong\u003enatural treatments\u003c\/strong\u003e. The grapes are picked at \u003cstrong\u003efull maturity\u003c\/strong\u003e, pressed on an old vertical press, then aged in barrels of several wines. Vinification is done \u003cstrong\u003ewithout input\u003c\/strong\u003e, bottling \u003cstrong\u003ewithout pump\u003c\/strong\u003e. \u003cbr\u003e We met Morgane and Christian at their home in winter 2020, and we were immediately touched by their work. The wines are of great delicacy, characterized by great precision and very beautiful balances. Morgane pays great attention to all the details: from the work in the vineyards to the labels made hand in hand with a 15th century Auvergne mill. \u003cbr\u003eThe Domaine has made a name for itself among lovers of \u003cstrong\u003enatural wine\u003c\/strong\u003e.
