Originally from Belgium and trained in architecture, Maxime discovered the ruins of Château de Marzilly, a historic 12th-century building surrounded by \u003cstrong\u003e32 hectares\u003c\/strong\u003e of parkland and forest. This discovery led him to restore the château, but above all to rediscover a plot of vines spared by the phylloxera crisis.\u003c\/p\u003e\n\u003ch3 class=\"\" data-end=\"1109\" data-start=\"1056\"\u003eA late-blooming passion for demanding viticulture\u003c\/h3\u003e\n\u003cp class=\"\" data-end=\"1426\" data-start=\"1111\"\u003eFascinated by viticulture, \u003cstrong\u003eMaxime Ullens\u003c\/strong\u003e went back to school at the Lycée Viticole d'Avize to obtain his “brevet d'exploitant agricole”.
