Coming from a family of winegrowers,\u003cstrong\u003e Nicolas Einhart\u003c\/strong\u003e joined the family estate in 1990. In 1997 he was one of the founding members of the \u003cstrong\u003eTIFLO\u003c\/strong\u003e association whose main commitments are the \u003cstrong\u003emaintenance of ecological refuge zones\u003c\/strong\u003e and the r\u003cstrong\u003eefusal of the most harmful phytosanitary products\u003c\/strong\u003e. It was therefore quite natural that Nicolas decided to convert his vineyard to \u003cstrong\u003eorganic farming\u003c\/strong\u003e in 2008 with the first production of certified grapes in 2011. It is with this high quality raw material that Théo will subsequently be able to produce natural wines. The harvest is entirely done by hand, early and only in the morning for maximum freshness. The berries are then macerated for several days. As is often the case in natural wine, the only interventions that Théo allows himself consist of drawing down, pumping up, aerating... no brutal intervention, but on the contrary know-how. If he vinifies terroir by terroir, Théo does not then stop himself from assembling, re-composing and recreating balances in his natural wines.
