Without sensitivity, initially, for organic farming, biodynamics and natural wine, he gradually realized that he had to modify his practices. It was following a pilgrimage to Santiago de Compostela that Jean-Marc radically changed his way of working, in the vineyard and in the cellar.\u003c\/p\u003e\n\u003ch2\u003eUncompromising winemaking in the service of life\u003c\/h2\u003e\n\u003cp\u003eFrom now on, organic farming is obvious to Jean-Marc, and biodynamics will not take long to follow. White grape varieties are generally vinified by whole-cluster maceration. Aging is often done in family tuns typical of the Alsatian vineyard. and give birth to wines that are \u003cstrong\u003esapid\u003c\/strong\u003e, \u003cstrong\u003eexpressive\u003c\/strong\u003e and full of \u003cstrong\u003eemotion\u003c\/strong\u003e.
