No Champagne climates unlike Burgundy where more than 1,200 plots have been carefully registered for several centuries, and classified according to their ability to produce wine. From then on, Benoît's project is clear: he will look for grapes from different terroirs of the \u003cstrong\u003eCôte des Bar\u003c\/strong\u003e, and try to understand them. This is how his first vintages were born in 2016. \u003cstrong\u003eBoréal\u003c\/strong\u003e will, for example, come from vines planted with \u003cstrong\u003ePinot\u003c\/strong\u003e \u003cstrong\u003eNoir\u003c\/strong\u003e and exposed to the north only. \u003cstrong\u003eAustral\u003c\/strong\u003e will be made from \u003cstrong\u003ePInot\u003c\/strong\u003e \u003cstrong\u003eNoir\u003c\/strong\u003e planted in the South only. \u003cbr\u003eThe vintages come one after the other for \u003cstrong\u003eBenoît\u003c\/strong\u003e and are marked by a certain regularity in the quality of the champagnes he offers. Raised at the Vouette \u0026amp; Sorbée school, the champagnes come from a single vintage, so no blending.
