Initially close to \u003ca href=\"https:\/\/mireehaute.com\/en\/collections\/frederic-cossard?_pos=1\u0026amp;_psq=cossard\u0026amp;_ss=e\u0026amp;_v=1.0\" target=\"_blank\" title=\"Frédéric Cossard\" rel=\"noopener noreferrer\"\u003e\u003cstrong\u003eFrédéric Cossard\u003c\/strong\u003e\u003c\/a\u003e and \u003cstrong\u003ePhilippe Pacalet\u003c\/strong\u003e, they are moving quite quickly towards \u003cstrong\u003enatural wine\u003c\/strong\u003e. With now a good fifteen years of experience, they are part of the recognized winegrowers of this new Burgundian generation. \u003cbr\u003e Passionate about \u003cstrong\u003ephytotherapy\u003c\/strong\u003e treatments, Tomoko and Guillaume seek to work as precisely as possible in the vineyard, to then \u003cstrong\u003eminimize\u003c\/strong\u003e interventions in the cellar. The \u003cstrong\u003ewhites\u003c\/strong\u003e ferment in \u003cstrong\u003ebarrels\u003c\/strong\u003e as \u003cstrong\u003enaturally\u003c\/strong\u003e as possible, the \u003cstrong\u003ereds\u003c\/strong\u003e are \u003cstrong\u003ewhole bunches\u003c\/strong\u003e, most of the time macerated in their large \u003cstrong\u003ewooden vats\u003c\/strong\u003e. The rest of the aging is done most of the time in barrels, with an addition of So2 when strictly necessary. \u003cbr\u003eOne of the particularities of the estate lies in the large number of plots dedicated to \u003cstrong\u003eAligoté\u003c\/strong\u003e that Tomoko and Guillaume look after. There are even\u003cstrong\u003e 17 acres of century-old Aligoté\u003c\/strong\u003e on the estate... They are therefore part of this generation of Burgundian winegrowers who are restoring the nobility of a once unloved grape variety. \u003cbr\u003e It was during one of our many wanderings in Burgundy that we met the two accomplices of \u003cstrong\u003eChanterêves\u003c\/strong\u003e, and we were immediately seduced by the wines. Please note: Tomoko and Guillaume also buy some grapes near their home, from winegrowers who work at least organically.
