His cellar, dating from the 19th century, houses century-old manual machines, which he still uses to press and define his wines. Yann strives to offer champagnes resulting from \u003cstrong\u003eprolonged aging on pupitres,\u003c\/strong\u003e in order to enhance the aromatic complexity and elegance of his vintages.
