They produce around \u003cstrong\u003e1,800 bottles\u003c\/strong\u003e a year, the first of which have just gone on sale. \u003cbr\u003e\u003c\/p\u003e\n\u003ch3 data-end=\"944\" data-start=\"909\"\u003e\u003cstrong data-end=\"944\" data-start=\"909\"\u003eDelicate and natural winemaking\u003c\/strong\u003e\u003c\/h3\u003e\n\u003cp\u003eThey take a light approach to winemaking, with whites fermented in barrels at\u003cstrong\u003ecool temperatures\u003c\/strong\u003e to emphasise freshness, \u003cstrong\u003eminerality\u003c\/strong\u003e and floral notes. The reds are fermented in\u003cstrong\u003e whole bunches\u003c\/strong\u003e with light extraction, creating elegant, textured wines.
