Avec son compagnon \u003cstrong\u003eChristian Knott\u003c\/strong\u003e, ils plantent des vignes autour de leur maison de \u003cstrong\u003eMavilly\u003c\/strong\u003e, et agrandissent petit à petit le \u003cstrong\u003eDomaine Dandelion\u003c\/strong\u003e. Ce territoire des \u003cstrong\u003eHautes Côtes de Beaune\u003c\/strong\u003e leur va à merveille : les vendanges s’attendent patiemment, bien plus tard qu’en \u003cstrong\u003eCôte de Beaune\u003c\/strong\u003e ou \u003cstrong\u003eCôte de Nuits\u003c\/strong\u003e. Les raisins bénéficient de la fraîcheur de ces \u003cstrong\u003eparcelles en altitude\u003c\/strong\u003e, et cela se retrouve dans les vins. \u003cbr\u003eGuidés par l’expérience de Christian - ancien maître de chai chez\u003ca title=\"Chandon de Briailles\" href=\"https:\/\/mireehaute.com\/collections\/chandon-de-briailles\" target=\"_blank\" data-mce-href=\"https:\/\/mireehaute.com\/collections\/chandon-de-briailles\"\u003e\u003cstrong\u003e Chandon de Briailles\u003c\/strong\u003e\u003c\/a\u003e - ils travaillent le plus \u003cstrong\u003enaturellement\u003c\/strong\u003e possible à la vigne comme au chai : pas de soufre dans les vignes, doses minimales de cuivre, labours au cheval \u0026amp; \u003cstrong\u003etraitements naturels\u003c\/strong\u003e. Les raisins sont cueillis à \u003cstrong\u003epleine maturité\u003c\/strong\u003e, pressés sur un vieux pressoir vertical, puis élevés dans des fûts de plusieurs vins. Les vinifications se font \u003cstrong\u003esans intrant\u003c\/strong\u003e, les mises en bouteille \u003cstrong\u003esans pompe\u003c\/strong\u003e. \u003cbr\u003eNous avons rencontré Morgane et Christian chez eux à l’hiver 2020, et nous avons immédiatement été touchés par leur travail. Les vins sont d’une grande délicatesse, caractérisés par une grande précision et de très beaux équilibres.
