Double Zéro
Double Zéro, an unadorned and liberated Burgundy
A micro-négoce born in Beaune through two enthusiasts
Double Zéro is a Burgundian micro-négoce founded by Jean-François Cuzin and François Bouillot, launched in the late 2010s around a simple idea: to make the most naked Burgundy wines possible, with zero superfluous additives and zero added sulfur whenever the vintage allows. Based around Beaune, the project operates on a very small scale, with confidential volumes and a production that remains intentionally artisanal.
The duo comes from different but complementary backgrounds: François worked in the vineyards of Prieuré-Roch, while Jean-François retrained in viticulture following a previous career. Double Zéro relies both on purchasing grapes and, depending on the cuvée, on vineyards worked directly, notably in the Hautes-Côtes de Beaune.
Burgundies of infusion, fruit, and energy
The winemaking seeks less extraction than infusion, featuring gentle macerations, restrained aging, and a desire to keep the fruit as vibrant as possible. The reds often showcase Pinot Noir, sometimes blended with Gamay depending on the cuvée, with profiles that are fresh, supple, and highly drinkable. The whites and Aligotés follow the same philosophy: plenty of tension, minimal artifice, and an authentic expression of the vintage.
Cuvées such as Aubus Ouest, Les Pommereys, Saint Martin, or Les Autrots clearly demonstrate the spirit of the project: direct, precise Burgundies without any showiness, made to be enjoyed with pleasure while retaining the depth of the terroir. A very liberated vision of the region, on a small scale, with a great deal of energy in the bottles.
